The durable yet lightweight stainless steel smoker comes with a non-stick rack and stand and a holder for Sterno fuel canisters. If you’re using it at home, it’s also dishwasher safe for easy cleaning, although you’ll have to clean it by hand if you’re camping! We’ve also included some recipes to get you started.
L’il Smokey can be used at home on the gas burner or outdoors using a gas camping stove, barbecue, a campfire, or with the stand and Sterno holder. Historically, the smoking process was used to preserve food such as smoked haddock, salmon or kippers. Hot smokers are now being used in the kitchen to cook the food, which is accomplished using indirect heat that preserves texture and moisture. Wood chips sit under the food in a smoke box and they infuse the food with heat and that distinctive, smoky flavour. Different woods provide very different tastes. To start you off, we’ve provided two very popular woods: hickory, which is used a lot in the US, and oak, which is often used here in the UK.
Most foods can be smoked, from the obvious options of fish and meat to less obvious ingredients such as potatoes. Smoking food takes longer than barbecuing because it cooks the food at a lower temperature. Unlike a barbecue, a smoker doesn’t have to be continually watched, giving you plenty of time to relax while your dinner smokes away.
