Our Wood Dust is perfect for smaller smokers such as the Callow Portable Outdoor Smoker, Cameron Smokers and cold smoke generators. In smaller hot smokers dust is the optimum size for smoking your food. Bigger wood chips would take too long to heat up and the food would already be cooked before the smoke has had chance to infuse it with flavour. Smaller size wood chips, referred to as Wood Dust, heat up much quicker and begin producing smoke a lot faster. This ensures the smoke has plenty of time to infuse fantastic flavours into your food.
For cold smoke generators Wood Dust is ideal. Using a cold smoke generator the dust will smoulder in small amounts continuously rather than smoking it all at once producing heat which is dangerous in cold smoking. Spray the dust with water and leave it to soak in for only a few minutes so it becomes damp before igniting. The damp wood dust will smoulder to produce a cool smoke rather than a fire.
Our kiln dried Wood Dust comes in a 1.2 litre re-sealable tub for dry easy storage. Only a tablespoon of flavoured dust is needed in the Cameron and Callow Smokers, however this will vary according to your own personal taste and also the quantity of food your smoking.
If you want to use wood dust on your BBQ we recommend using a smoke box to hold the dust together. This will provide enough to smoke to favour your BBQ food. If you want to sprinkle some directly onto your hot coals we would recommend using the slightly larger Wood Chips. For very large joints of meat cooking over a long period of time the best size to use would be the large Wood Chunks.
Choose from our wide range of flavours including Beech, Oak, Apple, Cherry, Hickory and Whisky Oak. Oak and hickory are classed as heavy woods and hickory in particular imparts a really strong flavour which will work well on large cuts of meat, especially beef or pork which are robust enough to be complemented by the strong taste. Others give a milder flavour such as Beech. If you have a sweet tooth go for a fruity flavour such as apple or cherry which beautifully enhances the natural sweetness in your food. Experiment with a variety of flavours to find your favourite and why not mix more than one flavour together to perfect your very own unique smoke flavour sure to impress guests at BBQs and dinner parties. If you are new to food smoking we recommend using small amounts at first and add more depending on your preference. Wood Dust doesn’t only add flavour to your food but can also add a rich appetising colour.
