Brinkmann wood chunks are a great barbecuing accessory for adding depth and enhancing the natural flavour of meats, fish and even vegetables while cooking. Available in hickory and mesquite varieties, they can be used in a smoking chamber, in a separate smoker box with a gas barbecue, among or instead of the coals on a charcoal barbecue, or even in a fire pit. The chunks can be soaked in water for ten minutes first for a slower burn and richer flavour. To deepen the intensity, use the lid on your barbecue and place your meat directly over the chunks of hickory or mesquite wood.
The chunks are 100 per cent natural wood in a choice of American Deep South flavours. Hickory is a very popular smoking wood that provides a rich, delicately sweet flavour. It is traditionally used with hams, pork and ribs. You can smear a bit of honey on the meat to emphasise its sweet hickory-ness even further. Hickory can also be used with beef, chicken and fish to add smoky intensity. A little hickory flavouring goes a long way!
Use mesquite if you really want to feel like a cowboy - dressing in a Stetson hat and chaps is optional! This is a strong, dark, Texan flavour that complements most meats and fish. Mesquite should be used sparingly to avoid overpowering the food.
Make sure the wood chunks are burning at a slow and even temperature before you add your meat to the barbecue. There's usually a bit of trial and error involved in finding the perfect smoking routine. Cook slowly, turning the meat regularly and taking care not to overcook it. Jacket potatoes, coleslaw and tomato salad are the perfect accompaniments to smoky barbecued meats, complementing the rich sweetness of the meat rather than competing with it. You can also simply enjoy the tasty ribs and wings on their own. Brinkmann wood chunks are natural products that do not contain chemical additives or flavourings.
