To achieve the best possible tastes for your barbecue creations, wood smoking chips are essential. Various woods will lend food their own special flavour. Fruit woods such as cherry and apple tend to produce a smokiness that is delightfully mild in taste, and the flavour adds a hint of sweetness to your food. Hickory is a much stronger flavour so we recommend using small amounts to begin with until you are more familiar with smoking food, then gradually increase the strength to your preferred taste. Alder, beech, oak, whisky oak and sweet chestnut are softer flavours. Each flavour also adds a different richness of colour to your food.
For best results soak your wood chips for around 30 minutes before you plan to start cooking. Ensure that they are completely covered with water and let them sit. This will add moisture and allow the wood chips to burn for much longer, which will give the smoke plenty of time to fill your food with its delicious flavours. If you feel like experimenting with flavours why not try soaking the wood chips in wine, beer or juice. Or create a beautiful mix of flavours by combining two different flavour wood chips.
It is important to make sure that the wood chips are burning properly before you begin cooking; the most efficient method is to set a handful of wood chips over hot coals. Once the chips have stopped flaming and have begun to manufacture smoke, it's time to get grilling. Many people burn wood chips over charcoal as the heat and smoke levels are easier to control for optimum cooking results. They are also great to use on a gas barbecue grill or in your oven. Simply place the wood chips in one of our smoker boxes and pop it on top of the grill.
Our wood chips are suitable for most BBQs and smokers but if you are using one of our Cameron Food Smokers we would recommend the smaller wood dust selection for best results.
