Callow's smoke box is the easiest way to create that gorgeous deep, rich smoky flavour at home on your barbecue.
While gas grills are clean and easy to use, they do not reproduce that characterful smoky flavour you get from a proper wood fire or coal barbecue. Callow has designed its smoke box in a V shape to fit neatly between the gas flame deflector bars on most gas barbecues. In the middle of the smoker is a water reservoir for humidity, which helps meat to retain its juices and emphasises the smoky flavour provided by the wood chips in trays on either side. As the heat and steam from the water reservoir rise with the smoke from the wood chips, that unique, smoky flavour is imparted to your meat and will help you to gain a reputation as the ultimate barbecue king ? or queen! The smoker ensures that the wood chips are directly below the wood grate for an intense smoky flavour hit on chicken, steak, lamb or any other meat, plus fish and vegetables.
The easy-to-use smoker box is 13.75 inches long and made of high-quality stainless steel with a hinged lid. It is reusable and simply needs refilling with water and wood chips before you fire up the barbecue. Different flavour sensations can be created by using different wood chips, such as barbecue oak, whisky oak, apple wood or hickory. The clean and simple system means you simply lift the hinged lid and top up with wood chips according to the smoky effect you are trying to create. The universal V-shaped bottom should fit most barbecues and means the smoker can be easily lifted in and out to clean. When you want some smoky cooking, fit the smoker box neatly between the gas flamer bars under the grate in your barbecue, with the lid closed. Replace the grate and make sure you place whatever you are cooking on the grate directly above the smoker. You are not obliged to fill the water reservoir, but doing so will result in more tender, juicy meat and intensify the flavours. Chargrilling your meat until it is black and hard on the outside will still not do it any favours!
