Whichever one you prefer, the cook always has that niggling worry about whether the turkey has been properly cooked or not.

While it’s true that you can weigh the turkey, calculate timings on an old envelope, and then hope that it all works out, why add unnecessary stress? Preparation of your turkey is the same as always. Switch the oven on in good time to heat at 180°/350°F/Gas 4. You can clean the bird, slide some stuffing between the breast and skin and then pop the turkey on the scales to calculate the approximate time it will be ready. In general, you should allow 20 minutes per 500g. Place the turkey in a deep roasting tin. Pop a warm orange in the cavity, Jamie Oliver-style, and rub the turkey skin with olive oil before sprinkling with herbs. Insert your Pop Up Timer into the turkey at the thickest part of the thigh. Cover the turkey with tin foil and pop it in the oven.
Remove the tin foil from the turkey for the final hour of cooking and make sure you can see the turkey pop up timer clearly. Prepare your vegetables and relax; the timer will alert you when the meat is cooked and has reached the safe temperature of 185°F (85°C). Take your turkey out of the oven and allow it to rest for about 20 minutes before carving, then stand back and wait for the applause to begin!
